Irish Whiskey Pairings Event

In addition to five pairings, guests will also enjoy a fine selection of imported and domestic cheeses accompanied by flatbread and crackers, carved Italian meats and grilled vegetables. Plus, enjoy live music from Dustin Douglas from 9:00pm - Midnight! 
 

Pairing One

Jameson Caskmates Stout
An initial aroma of freshly cut hay is complemented by a crisp orchard fruit character - green apples and pears, with a twist of lime zest. Mild pot still spices appear, deepening from green tea to hazelnut and milk chocolate. The initial sweet mouth coating typical of the Irish pot still inclusion is quickly complemented by the subtle touch of hops and cocoa beans from the beer cask finish. A long and sweet finish with milk chocolate and butterscotch.

Drunken Beef

Pairing Two

Redbreast 12-Year-Old
Full of aroma and flavor, it benefits from a strong contribution from distillates which have matured in Oloroso sherry casks, giving it its trademark Christmas cake character. Rich and spicy, with notes of dried sultanas and figs. Toasted wood with hints of vanilla.

Baked Brie
Warm brie in a puff pastry cup with pecans and macerated cherries

Pairing Three

Powers John’s Lane 12-Year-Old
An abundance of earthy aromas, leather, tobacco with layers of charred wood, dark chocolate and treacle toffee. Full bodied spice front followed by vanilla, honey and dried apricot, with lingering honey sweetness on toasted oak.

Wild Mushroom Tart
Herbed wild mushrooms cooked with vermouth in a savory tart shell

Pairing Four

Green Spot
Matured in a combination of new bourbon and refill bourbon casks as well as sherry casks. Fresh aromatic oils and spices with orchard fruits and barley on a background of toasted wood. Full spicy body taste with a hint of cloves along with the fruity sweetness of green apples, rounded off with toasted oak. Followed by lingering flavors of spices and barley.

Pairing Five

Yellow Spot 12 Year Old
Yellow Spot is special in that it contains whiskey that has been matured for a full 12-year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity.
